recipe of the day

I've been wanting to make baked donuts for awhile now
but didn't have the pans and didn't NEED to buy them.

I happened to have some Kohl's cash last week
and since I don't need {can't fit} any more clothes
I decided to look through their housewares department.

I remembered I wanted the pans but didn't think they would have them.
Sure enough, you can always count on the Food Network to provide.
I grabbed two and was on my way.

My first attempt was pumpkin, of course.
They were so so delicious!
I can't wait to make another flavor.
Pinterest has so many ideas!

I think I found a new favorite thing to bake, and eat!

 
Baked Pumpkin Donuts
this made about 6 dozen mini donuts
 
Ingredients
  • 1/2 cup canola oil
  • 3 large eggs
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups pumpkin puree (not pumpkin pie filling)
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 3/4 cups + 2 tablespoons all-purpose flour 

Topping
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons cinnamon
  • 2 tablespoons butter, melted
 
Instructions
  1. Preheat oven to 350 degrees F. Spray donut pan with cooking spray.
  2. To make the donuts, beat together oil, eggs, sugar, pumpkin, cinnamon, nutmeg, ginger, salt, baking powder and vanilla until smooth. Add the flour and stir until smooth.
  3. Fill each donut cup about 3/4 full (I used a pastry bag with the end snipped off to do it easily) Bake for 16-8 minutes. Allow to cool slightly before removing from pan.
  4. To make the cinnamon-sugar topping, mix together sugar and cinnamon in a shallow bowl until well combined. Brush each donut with melted butter then toss in cinnamon-sugar mixture until evenly coated.
