Hall of Fame


Saturday night we got to go to the
Special Olympics Hall of Fame dinner.

It was a fun fancy night out.
I feel so lucky yo get to do all these great things.

recipe of the day

I've been wanting to make baked donuts for awhile now
but didn't have the pans and didn't NEED to buy them.

I happened to have some Kohl's cash last week
and since I don't need {can't fit} any more clothes
I decided to look through their housewares department.

I remembered I wanted the pans but didn't think they would have them.
Sure enough, you can always count on the Food Network to provide.
I grabbed two and was on my way.

My first attempt was pumpkin, of course.
They were so so delicious!
I can't wait to make another flavor.
Pinterest has so many ideas!

I think I found a new favorite thing to bake, and eat!

 
Baked Pumpkin Donuts
this made about 6 dozen mini donuts
 
Ingredients
  • 1/2 cup canola oil
  • 3 large eggs
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups pumpkin puree (not pumpkin pie filling)
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 3/4 cups + 2 tablespoons all-purpose flour 

Topping
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons cinnamon
  • 2 tablespoons butter, melted
 
Instructions
  1. Preheat oven to 350 degrees F. Spray donut pan with cooking spray.
  2. To make the donuts, beat together oil, eggs, sugar, pumpkin, cinnamon, nutmeg, ginger, salt, baking powder and vanilla until smooth. Add the flour and stir until smooth.
  3. Fill each donut cup about 3/4 full (I used a pastry bag with the end snipped off to do it easily) Bake for 16-8 minutes. Allow to cool slightly before removing from pan.
  4. To make the cinnamon-sugar topping, mix together sugar and cinnamon in a shallow bowl until well combined. Brush each donut with melted butter then toss in cinnamon-sugar mixture until evenly coated.

Eva's

I finally made it to Eva's bakery Saturday.
And it was delicious, I want to try everything on the menu!
 
I went to school with Kendra and Karlie and I love them both.
Karlie lives in Colorado now and Kendra is in Orem.
Karlie was in town so we finally planned a lunch date.
It was so fun to catch up and eat yummy food!


Karlie had to rush to a hair appointment and we didn't think to take a picture until after.

jazz game

Last week was so busy.
We had something every night but Friday
so I was looking forward to relaxing at home.

Thursday my boss sent an email that she had box seats to the Jazz game Friday night
if anyone wanted some.

I like to go to a couple Jazz games a year so I got some.

The seats were great!
There was no food in the suite so we ran to the Gateway and grabbed something to eat.

It was a fun night!

halloween

I cannot believe it is November already.
I don't know if it's because I'm getting older or what
but time is going by so fast these days.

Friday was Halloween.
I kept thinking we should make plans for the night,
you know, be social.

By Friday nights I am ready for a cozy night in
so we did just that.

We had stew and sugar cookies
and watched a scary movie.

It was the perfect Halloween night.
